Orest cooking kettles use plumbing fittings (taps, valves) and electrical components from well-known European manufacturers, so the equipment meets all safety standards and can operate continuously for a long time, given the loads and reliability requirements used in a professional kitchen.
The boiler operates on the principle of indirect heating of the contents of the cooking vessel with steam generated in a steam-water jacket. This heating process eliminates the burning of the products being cooked. The boiler design is welded from 1-2 mm thick stainless steel, consisting of a cooking vessel, an outer vessel covered with thermal insulation and a body. The space between the cooking vessel and the outer vessel forms a steam-water jacket. At the bottom of the outer vessel is a steam generator with built-in tubular electric heating elements. The cooking vessel is closed with a hinged lid. The boiler is equipped with a drain cock to drain the liquid. The water level in the steam-water jacket is controlled using the water circuit overflow cock.
To control and release excess pressure in the steam-water jacket, the boiler is equipped with a control group located in the upper part. A rotary filling pipe is used to fill the cooking vessel with water. The choice of water (hot, cold, hot + cold) is carried out by a switch on the control panel. Filling the steam-water jacket with water is carried out by pressing the steam-water jacket fill button. The heating parts are protected from overheating by a protective thermostat.
